Shirriff Lemon Pudding and Pie Filling is the “Famous Lemon Pie” served coast to coast in Canada, especially throughout Prince Edward Island during the famous Lobster Festival each summer. It requires cooking with water, and the addition of egg yolk and butter. The egg whites are used to make meringue. For the perfect result every time, bring the mixture to a boil and simmer for a maximum of 30 seconds only. If left to boil for too long, the citric acid will start to destroy the starches, therefore causing a soft consistency. Always a favourite at home and in Foodservice establishments!
